This is one of the best time-savers that I use about every other week. Bolognese sauce is basically a tomato meat sauce. Traditionally it's slow cooked and takes oodles of time that I don't have. But this simple pressure cooker version tastes slow-cooked, and is even better the next day (of course!). I usually just use beef, but you can mix it up and add different kinds of meat for a more rich flavor. I've tried adding a little venison from a neighbor who gave us some of his hunting bounty, and it was great.
